Somewhere Different

We have been to Melbourne for a couple of days.  The reason was to visit our daughter and celebrate her birthday.  However, I managed to sneak in a spot of shopping.

Last year I got rid of my knee-high black boots as the heel was simply higher than what I was comfortable wearing.  I had been debating for some time about replacing them and I finally found a pair that I was happy would suit my needs.

I wore them for most of the past two days, including quite a bit of walking and they are very comfortable.  I am really pleased with my purchase and expect they will last me quite a few years.

My other purchase was at a small, independent fabric shop in the northern suburb of Ivanhoe.  There were lots of beautiful winter fabrics but I bought a piece of linen to make something for myself next summer – probably a blouse of some description.

I fell in love with the colour and pattern of this piece and am sure it will make a gorgeous garment.

 

The Festival of Y (My Birthday)

Today is my birthday and GMan and I both managed to organise the day off.

In one of our local papers last week there was an article about a walking trail in a nearby National Park.  It follows an route of the old railway track between Landsborough and Mooloolah and even goes through an old tunnel.  When we read about this opportunity which is almost on our doorstep we decided that we would have to check it out.

Today was the day, so we set off on the return walk of about 7km which included a slight detour onto a side track.

After our walk we headed to the Glasshouse Mountains lookout where we had a picnic barbecue lunch and enjoyed the bush surroundings.

It was a great opportunity to spend some time enjoying the delights of our local area during the week when most people are at work and there was barely anyone else around.

Happy Easter!

The desktop computer will not be back in action until the middle of the week so I am struggling with and old laptop which is very slow and not responsive.  However, I am determined to persevere and bring you a recipe for gluten-free hot cross buns.

Here is the original recipe which I used for the first batch which I made on Tuesday. The only alteration I made was to add another teaspoon of psyllium husk instead of the teaspoon of xanthum gum.

The initial prototype was acceptable but I felt I could improve on the recipe a little.

The instructions said that the recipe made 8 buns so I followed this and they were much too large for my liking.  The buns also tended to spread on the tray rather than rise.  Additionally, we prefer more spice and fruit.  I made a note of this for my second attempt.

Here is my amended recipe with method and photos.  Do not be put off by the long list of ingredients.  I have divided the ingredients into separate sections accoring to the method.

GLUTEN-FREE HOT CROSS BUNS

Ingredients

1 cup sultanas
1 cup boiling water

7g dry yeast
1 teaspoon sugar
120ml warm water

24g psyllium husk
3 eggs
250ml hot water

3 cups gluten-free flour
2 teaspoons baking powder
1 teaspoons bicarb soda
1 & 1/2 teaspoons salt
75g sugar
2 teaspoons cinnamon
2 teaspoons mixed spice
Zest of 1 orange

2 tablespoons sugar
Juice of 1 orange

1 egg
1 tablespoon water

3 tablespoons gluten-free flour
Water

Method

Place sulatanas in a small bowl and cover with boiling water and allow to stand.

Combine yeast, sugar and warm water in a small bowl and set aside to activate.

In a another bowl combine the eggs and psyllium then add the add hot water and set aside to thicken.

Place a large bowl of hot water in the oven and turn oven to 100C.  Set timer for 5 minutes.  After 5 minutes turn the oven off and remove the bowl.  This means the oven will be perfect for the dough to rise.

Place the flour, baking powder, bicarb, salt, sugar, spices and orange zest in a bowl and combine.  Add the yeast mixture and egg mixture and mix thoroughly.  Finally, drain the excess water from the sultanas and stir them into the dough.  This step could be done by hand but I use my Kitchen Aid mixer.

Turn the dough onto a well-floured surface.  Although kneading is not required for gluten-free baking (no gluten to stretch) you can gently roll and fold the dough a few times before dividing it into suitable sized portions.  I weighed my balls of dough and chose to make them 75g each which yielded 17 buns.

Place balls of dough into muffin pans or on a tray and set the tray in the pre-warmed oven for 45 minutes.

While the dough is rising prepare the egg wash to brush the top of the buns by whisking the egg and water together.  Make the mixture for the crosses.  Blend together the flour and enough water to make a smooth paste which can be piped onto the buns.  Place the flour paste into a plastic bag and snip a tiny piece off one corner.

Remove dough from the oven and turn oven on to 200C to heat while you finish the buns.  Brush with egg wash.  Pipe crosses onto the buns.

Return buns to the oven set at 200C and cook for 20 – 25 minutes.

Place the sugar and orange juice in a saucepan and simmer gently until reduced and thickened.

When the buns are cooked remove from the oven and drizzle with the orange glaze.

Ready to eat.

I was very pleased with the result and the final word comes from my friend who said that it was just like the commercially produced fruit loaf.  This has inspired me to try baking this recipe as a loaf which could be sliced and toasted.

NOTE:  The other variation is the type of flour used.  The original rice uses tapioca and brown rice flour.  I use my own mixture which includes both of these as well as potato and quinoa flours.  You can choose a commercial gluten-free flour or you own combination as long as it totals 3 cups.

 

 

 

 

A Milestone

Today marks the 5th anniversary of this blog – Organised Castle.  WordPress sent me a message of congratulations this evening but I had remembered this morning when I checked back to the date of my first post.

It is interesting that I reach this milestone at a time when I have spent some time debating the future of Organised Castle.  I am definitely planning to continue with the blog but am yet to decide on the direction.

Some blogs have a very narrow focus with quite specific content whereas mine tends to be a more rambling approach to whatever is foremost in my mind.  Over the last 5 years I have covered topics as diverse as decluttering, my small wardrobe, gardening, menu planning, sewing, general organisation, cooking, green cleaning, preserving food and even some political commentary.

When I started the blog I made a commitment to myself to post every day in order to make it a habit.  Sometimes I stick to this and other times there can be substantial gaps when life gets in the way.  I have considered a less onerous schedule of perhaps 2 posts per week, however, I have decided to maintain the current random posting of whenever I have the time and something worthwhile to say.

While the frequency of posts is entirely my decision, I would love some feedback from you, dear reader, regarding the content.  I have recently posted a number of posts with recipes and preparation of our dinners.  These seem to have been popular and I am wondering if I should do more of this.  What would you like to see in future posts?  Anything I should leave out?  I would love your feedback because although this is part diary it is also about sharing knowledge and skills and I want to keep it relevant for you.

When I opened up a new post to write tonight’s post I noticed that I have published 999 posts on my blog since I began almost 5 years ago in March 2011.

There have been lots of ups and downs, times when I wondered whether I would keep going and others when blogging is just second nature.  GMan chuckles at some of the things I photograph because I need it for a blog post.  This afternoon he asked if I had taken photos of the new hen house that we have built – I assume he figures that is a blogworthy story.  It is, but will have to wait for another day because today I am celebrating my 1000th post.

To all of you you read and sometimes comment, I want to thank you from the bottom of my heart.  It is the knowledge that there are people out there who read whatever I write that inspires me to continue.

I was searching for a photo that really portrayed my feelings for the end of one year and beginning of the next.  I did not want images of alcohol or fireworks.

I found this which summed it up for me.

More Holiday Shopping

We have been home from our holiday for 3 days now and it is over a week since my last post.

I hope you all had a relaxed and happy Christmas, wherever you were and whatever you did.  We had a delightful day which we shared with our daughters and some festive food but did not over-indulge.

The other shopping I did on my holiday was a little more planned than the random collection from my last post.  I went to my favourite shop in Melbourne, Rivette & Blair, where I replenished my supply of tops.

The are all simple styles and basic colours that will mix and match with existing pieces in my wardrobe.

Finally, a loose navy v-neck top in very fine polyester.  It is super light and cool.

I look forward to sharing the different ways I wear these as I mix and match with shorts, trousers and skirts.

Christmas Cheer

Unlike some other years I have written very little about Christmas this year.

We decided not to put up the tree this year as we will be away for Christmas.

Yesterday we had a small Christmas celebration with my immediate family as we will not see them on Christmas Day.  We went out for a casual lunch, then went to the local playground so that our 2 granddaughters could use up some excess energy.  Finally, we adjourned to my brother’s place were we shared some sweet nibbles and drinks while we opened our gifts.  It was a low-key but perfect day.

The only thing that I had not done was send cards/letter/emails.  This afternoon I sat done and wrote a generic letter, added a couple of relevant photographs and sent it off to various corners of Australia and overseas with a couple of clicks.  I still have a small number of cards to post and I will do that tomorrow and hopefully they will still arrive in time for Christmas.

I am not sure how many blog posts will happen over the next week so I will take this opportunity to wish you all a very merry Christmas and a safe and peaceful New Year.

 

Christmas – Traditions & Expectations

It is less than 3 weeks until Christmas and there is no doubt that it is one of the most stressful times of the year.  This is partly due to the pressure we put on ourselves as a response to the media and advertising hype that invades our lives.

The images and expectations are thrown at us every day but reach a crescendo at this time of the year.  Perfect gifts, on-trend decorating, mountains of food and joyous relationships are portrayed in all types of media.  We have been exposed to these expectations for our whole lives so we continue to burden ourselves with our quest for the ‘perfect’ Christmas.

Then there are traditions.  The definition of this innocuous little word is:  “the transmission of customs or beliefs from generation to generation, or the fact of being passed on in this way”  Many families have traditions around Christmas and this can be a lovely touchpoint, especially for children.  It could be putting out reindeer food on Christmas Eve, hanging stockings on the end of your bed, going to Midnight Mass, viewing Christmas lights in your suburb or putting up the Christmas tree on a certain date.  All of these and many other little things are what can make Christmas special for your family.

The problem with traditions is that they can actually be a cover for a guilt trip.  You know the scenario – “but we always have hot turkey lunch” – when you would really rather be playing cricket at the beach and eating a burger from the deli across the road.  That might be a bit extreme but it is an example of the sort of situations that arise every year in many families.

Expectations need to be modified as children grow and families take on different forms.  What is a fun activity for a 5 and 8 year old might be utterly tiresome for those same children 10 years later.  Trying to force them to conform to ‘traditions’ that you set up will only drive them away.

The addition of partners adds a whole new dimension as they have their own family and that needs to be respected, too.  In time there will be grandchildren and the whole cycle begins again.

The end result of striving for the perfect Christmas is generally less than perfect and can be downright horrible so perhaps it is time to reassess.  Set realistic goals, enjoy the moment and don’t set yourself responsible for the behaviour and happiness of others – that is their responsibility.
