I have been meaning to write this post for ages but every time I think of it I am in the middle of serving dinner. You will understand why in a minute.

This is a jar lifter which I bought a few years ago. It is designed for lifting preserving jars out of a water bath or otherwise manipulating/moving hot jars. Who would have thought that it would have another use?

One of the challenges of the airfryer is extricating dishes of cooked food from the small space. Oven mitts are really not much use as they are too bulky. I often use these small dishes for making individual serves and they are perfect in the airfryer. I use them for making pot pies, individual baked desserts and mini quiches to name but a few.

So, back to the jar lifter. It is the perfect size to lift these small dishes from the airfryer. The lip on the edge of the dish means that it can be held securely to remove it.

I keep the jar lifter on the shelf in the pantry with the empty preserving jars and it is within easy reach of the airfryer on the bench opposite. Sometimes things just work perfectly and I actually smile to myself every time I use it to lift dishes of food from the airfryer.

It really is the simple things that make a difference.

Last week I was watching as the builder was putting the finishing touches to the pantry. Then there was some final sanding and painting to do.

The final step was to rearrange things. It was a big job and I took my time and there is still some more tweaking as usage patterns develop. Now it is time for the big reveal.

Since it is a long, narrow space it is impossible to photograph an overall view.

Since well before the pantry renovation began I have been dreaming of how I would organise the new, improved version.

Let me show you a few closer details.

I previously had these plastic tubs full of plastic storage containers in the corner cupboard. It was a reasonable solution but having them in a deep drawer is even better.

I spotted these 3 cute glass jars in an op shop recently and immediately decided that they would be perfect for GMan’s collection of teas – black, Earl Grey and green tea. All ready for making tea and coffee. The mugs are hanging just out of sight to the right of this photo.

I have reinstated the ‘breakfast corner’ with the kettle and toaster together near the entrance to the pantry.

The far end of the extended bench is home to the Kitchen Aid stand mixer and airfryer, both of which are used frequently.

Other regularly used appliances are stored on the open shelves. I have placed them at a height which makes them within easy reach and simple to access.

The storage buckets of bulk dry goods stand on the floor.

There is space to store the empty glass jars and bottles.

Teatowels and aprons in a drawer close to where they are used.

The addition looks completely seamless as we were able to match all of the components with the original. I am beyond ecstatic to see this all come together and I am really looking forward to the increased functionality of my kitchen and pantry.

I am always open to new ways of preparing or cooking food to simplify the process.

Since buying the airfryer about 18 months ago I have successfully modified my cooking methods for several recipes. One of these was zucchini quiche which I have converted to mini quiches made in the airfryer using muffin rings.

I recently took this a step further and made them in a muffin pan. Of course, a full-sized muffin pan does not fit in my small airfryer so I said to GMan that I needed to get another one so that he could cut it down to size. I had imagined that I might find one in an op shop but I did not even have to go that far. We were walking the dog one day and noticed a pile and goods on the verge to give away. Yes, it included a somewhat rusty muffin pan. GMan clean it up and cut in into some smaller sections that now fit in the airfryer.

I was very pleased with these zucchini muffins I made yesterday.

There will be no stopping me now. It will be so easy to whip up a small quantity of muffins fresh at anytime without having to heat the huge oven.

Tomatoes – A Test Run

I am always looking for ways to store the inevitable summer glut of home-grown tomatoes. I make tomato sauce (ketchup) but there is a limit to how much of that we need. The recipe is here if you are interested. I also used to freeze cherry tomatoes whole for use in casseroles and other cooking. I have dabbled in making tomato paste and tomato powder. These have all been reasonably successful but somewhat labour intensive.

Our tomatoes are not ready yet but the neighbours have generously shared their harvest.

I had these spread out to ripen and today I selected the reddest ones and cut them into quarters. I placed them into a round cake tin with 2 large cloves of garlic and a handful of basil leaves (all homegrown) and a drizzle of olive oil. I cooked them in the airfryer for 25 minutes at 170C then blitzed them in the high-speed blender.

I now have a couple of jars of delicious sauce which will be perfect for pizza bases, pasta dishes or adding to other dishes for a rich tomato flavour. This was super quick and easy and I will definitely be doing it again in the future. I choose not to process the sauce but simply store it in the freezer.

Functional or Fad?

It is now about 2 months since I capitulated and bought an airfryer.

I had not really investigated what an airfryer was or how they worked but when I heard them being mentioned in a couple of Facebook groups I dismissed them as another unnecessary kitchen gadget. My first real-life experience of them was when we were invited to dinner a couple of months ago. The potatoes cooked in the airfryer were absolutely divine.

GMan came home and started researching various options. Coincidentally, Aldi had them in their special buys the following week so we decided to bite the bullet and see whether all of the hype was worth it. For us it has certainly proven to be $70 well-spent.

Apart from the rather obvious benefit of being able to replicate at least some deep-fried food with minimal oil there are also considerable energy savings from using the airfryer rather than a conventional oven. Food cooks more quickly and it does not heat the entire kitchen.

The airfryer is also quick and easy to clean.

My first attempt was chips which were an absolute winner. Since then I have cooked salmon, arancini balls, marinated chicken pieces, garlic and eggplant slices as well as nachos.

For the nachos, I lined the cooking tray with baking paper and assembled the nachos as per my ‘recipe’ here. 8 minutes at 190C in the airfryer and dinner was ready.

I served these with a side salad of coleslaw.
